2 tablespoons olive oil
1 ½ pounds ground chicken
1 onion, finely chopped
1 red bell pepper, seeded and chopped
1 green chili pepper, seeded and chopped
4 cloves garlic, minced
2 cups diced tomatoes
2 cups cooked garbanzo beans*
1 teaspoon salt
1 teaspoon pepper
1 tablespoon chili powder
12 ounces Well Dressed Food Spicy Asian Peanut sauce
½ cup thinly sliced green onions, plus extra for garnish
Heat the olive oil in a 5 quart Dutch oven over medium high heat. Add the ground chicken, onion, bell pepper, chili pepper and garlic. Cook together for 10 minutes and chicken is browned, stirring regularly.
Stir in the tomatoes, beans, salt, pepper, chili powder, and Well Dressed Food Spicy Asian Peanut Sauce, reduce heat to medium-low, cover and simmer for 20 minutes, stirring occasionally. Stir in the sliced green onions and cook an additional 5 minutes
Serve in a rimmed shallow bowl and garnish each serving with sliced green onions.
* If using canned garbanzo beans, drain before adding to Spicy Peanut Chicken Chili.
