Adirondack Crunchy Granola Cookies

These simple cookies bring out the earthy flavor our our granola. Enjoy!

Ingredients:
1 cup unsalted butter, at room temperature
1 ½ cup sugar
1 egg
¼ cup water
1 teaspoon pure vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 12oz. package Adirondack Crunchy Granola, Apple-Crumble Granola or Maple-Walnut Granola

Instructions:
Preheat oven to 350 degrees.

Cream butter and sugar together using the paddle attachment of a mixer, until light and fluffy. Add egg, water and vanilla and mix well.

Sift dry ingredients together: flour, soda, salt, cinnamon & nutmeg. Slowly add to the wet ingredients with the mixer running on low speed. Mix just until combined. Stir in Adirondack Crunchy Granola using a spatula and make sure to fully scrape sides and bottom of bowl to incorporate everything together.

Drop by rounded teaspoonfuls onto baking sheet covered with parchment paper. Bake afor 12-15 minutes (or until lightly browned). Cool for 10 minutes on cookie sheets and then fully cool on wire racks.
