Ingredients
½ Cup butter, softened
¾ Cup packed brown sugar
2 Tbsp. granulated sugar
1 egg
1 teaspoon vanilla
5 drops yellow food coloring
2 & ¼ Cups North Country Oatmeal Pancake Mix
1 (6 oz.) package white chocolate chips, or white baking chocolate, chopped
1 Tbsp. grated lemon zest
Instructions
Preheat oven to 350 degrees. In a large bowl, beat butter, sugars, egg, vanilla, and food coloring. Stir in North Country Oatmeal Pancake mix, white chocolate chips, and lemon zest.
Place spoonfuls of dough on lightly greased baking sheets and bake 8 to 10 minutes, until set but not brown. Cool 1 minute, then remove from baking sheets to cooling rack.
Makes 3 dozen cookies.
