Individual Apple Pot Pies with Crunchy Granola Crisp Topping

Everyone loves the smell of slowly baked apples & the spices that make them magical. These individual desserts are sure to make your guests happy. We serve with a scoop of french vanilla ice cream.

Ingredients:

For Filling:
1 Granny Smith apple, cored, peeled & roughly chopped
3 McIntosh apples, cored, peeled & roughly chopped
1/2 cup raisins
Zest & juice of 1 lemon
¼ cup brown sugar
2 tablespoons granulated sugar
1 teapsoon allspice
1/4 teaspoon cinnamon

For Topping:
1 cup Adirondack Crunchy Granola
¼ cup all purpose flour
¼ cup brown sugar
½ stick cold unsalted butter, diced

Instructions:

Preheat oven to 375 degrees.

Combine all ingredients for filling in a large bowl and toss to coat apples. Divide apple mixture between 6 ramekins.

For topping, combine granola, flour & brown sugar in a medium bowl. Using a fork, cut in cold butter. Divide topping mixture evenly over ramekins.

Place ramekins on a sheet pan and bake for 40 minutes, until topping is crisp and apple filling is bubbling.
