We love butternut squash and soup made from it is one of our favorites. This recipe builds upon the standard method by adding maple syrup and our top secret ingredient: Spicy Asian Peanut Sauce.
Ingredients
1 large butternut squash (3-4 pounds) peeled, seeded and cut into 1 inch dice (about 8 cups)
4 cloves garlic, peeled
4 tablespoons Olive Oil
2 teaspoons Kosher salt
1 teaspoon freshly ground black pepper
1 large sweet onion, diced
6 cups chicken stock
1/2 cup heavy cream
1/4 cup maple syrup
1/2 cup Spicy Asian Peanut Sauce
Instructions
Preheat oven to 425 degrees.
Place squash and garlic cloves on a half sheet pan. Add 2 tablespoons olive oil, salt & pepper and toss to coat all sides of squash. Bake for 30 minutes.
In a large stockpot, heat remaining olive oil over medium heat. Add onions and sauté for 10-15 minutes until onions are translucent. Add roasted squash & garlic along with chicken stock. Bring to a boil and then reduce heat to simmer. Cook uncovered for 30 minutes. Stir in Spicy Asian Peanut Sauce, cream and maple syrup. Puree using an immersion blender, or in batches in a blender or food processor. Taste for seasonings and serve.
